Raw Foods Exposition 2001 I again want to share with you the value of raw living natural organic foods. The subject is awesome. We did not evolve on cooked foods. Revere Ware did not exist in the days of Jesus and Buddha. Most of their foods were raw and fresh. If you wish optimal health you MUST include a LARGE percentage of raw foods in your daily diet. International Raw Foods Festival Spring rolls made with minced ginger, jalapeno pepper, mint leaves, and golden miso. Guacamole with Celtic sea salt, fresh lime juice, and cilantro. Cashew-fudge cookies with freshly grated coconut, carob, and maple syrup. Bread made from sprouted spelt, mango, and wheat berries. Meat loaf from soaked sunflower seeds and portabello mushrooms, and pasta marinara with julienne zucchinis and squash. Nothing cooked. Everything raw. Funny thing about diets of the moment. Having once been a meat eating, ice cream slurper, I own perspectives of eating the right way, and the wrong way. Meat eaters "know" that saturated animal fat combined with animal cholesterol does not do the body any good. Meat eaters also "know" that the higher up one eats on the food chain, the more concentrated man's chemicals become in human flesh. Women's breasts and men's prostates become toxic dump sites for chemicals approved by America's regulatory agencies. Meat eaters also "know" that vegetarianism is a heck of a lot healthier than meat eating. Problem is, meat tastes so good. Problem is, vegetables are boring. Or so meat eaters believe. With each level, there is an awareness and a prejudice applied to the next level. Meat eaters "know" that vegetarian diets provide little taste and variety. Vegetarians apply the same flawed logic to Vegan diets. Vegetarians "know" that Vegan is healthier. Few vegetarians want to give up their comfort foods, milk and dairy products. The rewards of becoming Vegan include enormous burst of self awareness. One recognizes the ill effects caused by the Standard American Diet (S.A.D. Diet). Vegans "know" that raw diets represent the next level, but resist becoming raw foodists with the same ignorance that meat eaters apply towards vegetarians. THE RAW FOOD FESTIVAL For me, the week of June 18-24 will be an educational experience. I'll be living and eating raw foods with the movement's masters. Many people call Oregon the most beautiful of America's 50 states. The city of Portland (population 1.8 million) is just 78 miles from the Pacific Ocean, and 65 miles from an enormous glacier, Mount Hood. This spectacular mountain, the tallest in Oregon's Cascade range, crowns the city's skyline. I'll be in Portland from June 18-24 enjoying "America's RAW-FOODS festival." I've heard such wonderful things about Portland. Imagine a city housing America's largest book store, Powells (occupying an entire city block, and having more than one million volumes for sale).
